Spinach (Spinacia oleracea L.) is a green, leafy vegetable that can be grown in both spring and autumn. Fresh spinach is attributed antioxidant properties because it contains a large amount of flavonoid compounds, chlorophylls, ferulic acid and caffeic acid, quercetin and carotenoids such as beta-carotene and lutein and is packed with vitamins such as vitamin C, vitamin A and vitamin E and minerals like magnesium, manganese, iron, calcium and folic acid. Spinach is also a good source of chlorophyll, which is known to aid in digestion.
